Every Pakistani family has its own biryani story. Some swear by their nani’s recipe, others by a favourite spot in Karachi or Lahore. But ask any good cook the secret and the answer is almost always the same: the masala. A fresh, homemade biryani masala gives a deeper aroma and a more balanced taste than a packet that has been sitting on a shop shelf for months.
In this guide we look at what makes homemade masala different, how to use biryani, karahi and pulao masala for the best results, and which pure single spices are worth keeping in your kitchen.
Why homemade masala tastes better
Whole spices hold their oils, and those oils carry the aroma. Once spices are ground, they slowly lose that aroma over time. This is why a masala that is freshly prepared in small batches usually smells stronger and tastes brighter than one made in huge quantities.
Many mass-market masalas also rely on artificial colour to make the food look red, and on cheap fillers to bulk up the pack. A good homemade blend does not need either. Our Homemade Hyderabadi Biryani Masala 100g, for example, is freshly prepared in small batches, hygienically packed, and made with no artificial colours or low-quality filler.

Biryani masala: tips for a perfect biryani
Hyderabadi biryani is known for its rich taste, deep aroma and balanced spices. Our Hyderabadi Biryani Masala is made for both chicken and mutton biryani. A few kitchen habits help you get the most out of it:
- Bloom the masala in oil. Add the masala to hot oil with your onions and tomatoes, and cook it on medium heat until the oil separates. This releases the aroma and removes any raw taste.
- Marinate the meat. Mixing some masala with yogurt and marinating the chicken or mutton for a while gives the meat more flavour from the inside.
- Start with less, then adjust. Every family likes a different spice level. Use a smaller amount the first time, taste the gravy, and add more if needed.
- Layer and give it dum. Layer the rice over the meat, cover tightly, and steam on low heat. This is where the aroma really comes together.
For that special shaadi-style biryani, many cooks also add a few strands of saffron soaked in warm milk over the top layer. Our guide on saffron price in Pakistan and how to check real zafran explains how to choose good saffron.
Karahi masala: the dhaba taste at home
Karahi is a quick, bold dish, and its masala works differently from biryani. Our Balochi Karahi Masala 100g is made with roasted coriander seeds, roasted cumin seeds, roasted red chili flakes, chaat masala, black pepper, garam masala, black salt and kasuri methi. Each ingredient is measured and blended for a balanced, authentic taste.
Because the seeds are roasted and crushed, this masala works best added near the end of cooking, once the tomatoes have broken down and the meat is tender. Finish with fresh ginger, green chillies and coriander for that dhaba-style karahi everyone loves on a winter evening.
Yakhni pulao masala: mild and aromatic
Not every day is a biryani day. Punjabi yakhni pulao is lighter and relies on a good stock and gentle spicing rather than heat. The Homemade Punjabi Yakhni Pulao Masala 100g is freshly prepared with a mild and balanced flavour profile, ideal for chicken and mutton pulao, with no artificial colours or additives.
Pulao is also a good choice for family members who find biryani too spicy, such as elders or young children.
Pure single spices worth keeping
Even with a good blend, a few single spices let you adjust the taste the way your family likes it.
Kashmiri lal mirch
Pure Kashmiri Lal Mirch 250g gives a bright, natural red colour with mild heat. It is ideal for biryani, karahi and curries when you want a rich colour without making the dish too spicy, and it is free from artificial colours and additives.
Javitri and jaifal
Javitri (mace) is the outer covering of the nutmeg, and jaifal is the nutmeg itself. Both are classic in shaadi-style biryani and qorma. Our Pure Javitri 50g has a strong aroma and rich flavour, while Pure Jaifal 100g has a warm, slightly sweet flavour for both sweet and savoury dishes. Use them in small amounts, as their aroma is strong.
Haldi and chat masala
Organic Turmeric Powder 200g (fresh haldi) is pure and natural, with a rich colour and strong aroma for daily cooking. Homemade Chat Masala 100g adds a tangy, spicy finish to raita, fruit chaat, salads and snacks served alongside your biryani.
How to store spices so they stay fresh
- Keep masalas in an airtight jar, away from the stove and direct sunlight.
- Always use a dry spoon. Even a little moisture can cause lumps or spoil the powder, especially in humid cities like Karachi.
- Buy smaller packs that you will finish in a reasonable time, rather than one huge pack that loses its aroma.
